Protein Flapjacks

Flapjacks are a staple in my diet. I eat it almost every morning, because it is so easy and quick to make. You can add so many toppings and different ingredients that you won't get tired of it. And on top of it all, it is very nutritious!


Preparation time: 25 minutes


Ingredients:

2 scoops of protein powder

2 Tablespoons of ground oats

1/2 teaspoon of baking powder

50ml of water or milk

1/2 teaspoon vanilla essence

25ml of coconut cream (optional)

1 egg (can substitute with a tablespoon of ground flax seeds soaked in 2 tablespoons of water)

A sweetener of your choice (I used a few drops of liquid stevia)


Method:

1. Mix the dry ingredients together.

2. Add the water/milk, vanilla essence, coconut cream, egg and sweetener.

3. Blend thoroughly.

4. Use a non-stick pan and add oil or cooking spray.

5. Pour in a desired amount of the mixture, depending on how big you want your flapjacks to be.

6. Cook on medium to low heat until the flapjack is covered in bubbles (see image below).

7. Serve with toppings of your choice (greek- or double cream yogurt and berries are always a good idea or even some chocolate spread).

8. Enjoy!
