This is by far the easiest and most delicious recipe that I have ever tried. It is super versatile and can literally be eaten at any time of the day. All you need is flour, I used all purpose flour and sweet potatoes. You can use potatoes, butternut or pumpkin. You will need two units of flour for every unit of sweet potato.
Preparation time: 60 minutes
Ingredients:
2 medium sized sweet potatoes
1 cup all purpose flour
Optional: Oil for cooking.
Method:
1. Wash your sweet potatoes.
2. Cook them in water until they are soft, roughly about 15-20 minutes.
3. Take them out the pot and peel them.
4. Put the sweet potato and flour into a blender or mix them by hand. The sweet potato has to be hot for the flatbreads to cook better.
5. When a dough has formed, dust a surface with flour and knead the dough on the surface.
6. Break off a piece and roll it into a ball. You can determine how big you would like it to be.
7. With a rolling pin, roll the ball into a flatbread.
8. Heat a non-stick pan and put in oil of cooking spray. You can also choose to braai your flatbread on a braai pan on the fire.
9. Bake your flatbread on medium heat until it starts to brown, then flip to cook the other side.
10. Enjoy!
